SAUVIGNON - 2020
Noble grape of the Loire Valley, in France, it is a globetrotter who likes to grow all over the planet. It has found the perfect home in the Colli Orientali and Collio hills. Here the marl and sandstone soil encourage the roots to deep down in search for minerals. These elements allow the wine to express the varietal characteristic aromas and concentrate the bouquet on more subtle notes. The Sauvignon coming from Friuli is renowned for its elegance and unmistakable aromas.
Sauvignon Friuli Colli Orientali DOC
Destemming of the grapes followed by a partial cryomaceration and soft pressing. The must ferments at controlled temperature (17 ° - 18 ° C) in stainless steel containers.
No malolactic fermentation and batonnage for six months. The bottles are stored horizontally in air-conditioned rooms for a few weeks before being sold.
Colour: bright straw-yellow.
Nose: elegant entry of bergamot, orange and mandarin followed by notes of fresh aromatic herbs and hints of lavender.
Palate: fresh and savoury with continuous references to the olfactory sensations. The sip is long and satisfying.
It is useful to elevate main courses such as soups and saffron risotto. It expresses all its elegance with raw and cooked fish.
